THE CANDIED PECAN MARTINI
with Recipes for CANDIED PECAN LIQUEUR & CANDIED NUTZ


Ingredients: Candied Pecan Liqueur*, Vanilla Vodka, Half & Half, Candied Pecans



Looking for something interesting to make as a home made food gift, I stumbled on a very easy looking recipe for Candied Nuts and decided to give it a try. I made a few changes to the recipe to suit my own tastes and ended up with the recipe for my Candied Nutz below.

As I was munching away enjoying that great caramelized sugar and the great flavor of toasted pecans I suddenly thought, "I wonder if I could get this flavor into a vodka infusion and make my own Candied Pecan Liqueur?"

So I grabbed half a cup of the nuts before they got completely gobbled up, snagged a bottle of vodka and got to work on my recipe for Candied Pecan Liqueur.

The results were amazing - the infusion captured both the wonderful caramelized sugar and that lovely pecan flavor that only comes out when the nuts are toasted. I immediately started experimenting with my cocktail recipes.

I wanted to make sure I didn't overpower either the caramelized sugar flavor or the delicate toasted pecan so the Candied Pecan Liqueur is the star of this martini as well as the other two Pecan Martinis below.

I did not add any spices other than the Kosher salt and I kept the vanilla flavoring for my vodka infusion.

I made one mistake - I didn't make a large enough batch the first time so don't be a dummy like me - double or even triple the recipe - you won't be sorry!

As for the nuts - you'd be wise to double or triple that recipe as well because they are so good you'll eat them before you can make any of the great Candied Pecan vodka infusion, let alone give any away!

OK, I made two mistakes, not enough nuts and not a big enough batch of pecan booze - hey, I'm only human.

Recipe for Home Made Candied Nuts- Pecans, Walnuts
RECIPE FOR HOME MADE CANDIED PECAN LIQUEUR

Ingredients:

1/2 C. Candied Nuts (I used pecans)
8 Oz. 80 Proof Medium Quality Vodka
1/4 C. Sugar

Tools for Infusion:  A Blender, An infusion bottle or jar, A funnel

  • I simply put the candied nuts, sugar and the vodka into my little Magic Bullet blender and hit pulse about 5 or 6 times.  I didn't want to grind the nuts too small.
  • Then I poured this mixture through my funnel into my clean and waiting infusion bottle, labeled it and put it in the fridge to distill.
  • I shook the bottle every time I opened the fridge for something and I checked the flavor profile every few days until it reached the flavor strength and mellowness I wanted - this took about a week.



When it reached the flavor I wanted I filtered the liqueur to remove all the bits of pecan and detritus from the infusion.

Tools for Filtering: Medium sized metal strainer, several coffee filters, 2 clean glass jars.

  • Take the strainer and place it over one of your clean glass jars and pour the pecan liqueur through for the first straining step.  This will remove the largest pieces.
  • Do this several times and be patient as the smaller pieces will clog and you'll have to stop and clean the strainer.
  • With each cleaning of the strainer pour the strained liquid into the other clean jar.
  • Once all your liqueur is strained for large chunks, clean the strainer then line it with a coffee filter and pour it through this for the smaller particles.  You'll do this several times as well.  The smaller particles will clog the filter a lot so just pour a bit in and walk away for about 10 minutes or so and when you come back it will have filtered through, then you can throw out the filter and the sediments and repeat until you have filtered all your liqueur.
You will then have a nice jar of clear Pecan (or walnut or almond) Liqueur which you can then pour into a pretty bottle and serve or give as a gift!
